Slatki krumpir ušao je u hrvatske kuhinje, ali na mala vrata. Još ga uvijek veliki dio stanovništva ne poznaje i zaobilazi, znatiželjno ga pogledavajući na policama trgovina. Neki su ga isprobali pa odustali shvativši da okusom nije sličan običnom krumpiru. No, veliki je i broj onih koji su ga trajno zavoljeli, piše Agroklub.

Ime je dobio po krumpiru zbog sličnog načina pripremanja. Iako okusom drugačiji, učestalo se priprema kuhanjem ili pečenjem. Može se koristiti kao sirovina za juhe ili u varivima. Popečci i pire su također popularni. Gdje god se inače koristi bundeva ili mrkva može ići batat, pa čak i u kolače.

Uzgoj batata isplativiji od krumpira

Za njegov uzgoj u Hrvatskoj, Željko Markušić odlučio se prije 12 godina. Pokrenuo je obrt Biofert u Jastrebarskom i od tada ne prestaje rasti. Ušli su u sve veće trgovačke lance, a batat izvoze u Njemačku, Sloveniju, Crnu Goru i Mađarsku.

"Ideja je došla na fakultetu, razmišljao sam o nečem što drugi nemaju. Svi ovdje uzgajaju vinograde, rajčice, povrće, žitarice, a ja rekoh: idem probati nešto novo“, prisjetio se početaka.

Ovaj uzgajivač kaže da je uzgoj batata isplativiji od uzgoja običnog krumpira, ali da je više brige potrebno posvetiti skladištenju. Kada ga iskopaju, on ide u skladišta gdje se 5 dana zagrijava na 32°C. Poslije toga se čuva na 15°C.

Tu se konzerviraju sve rane i oštećenja da ne bi došlo do kasnijeg kvarenja. Pranje prije skladištenja nije preporučljivo, jer ako je godina suha i nema velikih oborina, onda se prašina s površine batata lako uklanja bez pranja, navodi ovaj agronom.

Žele povećati proizvodnju u kooperaciji

Ove godine su u vlastitoj proizvodnji imali batat zasađen na 10 h, a u kooperaciji na dodatnih 15 ha diljem Hrvatske od Baranje i Neretve, preko Kutine i Bjelovara. Godišnje proizvedu oko 400 tona (zajedno s kooperacijom) i pokraj Jastrebarskog unajmljuju skladišni prostor čije su kapacitete prerasli.

"Cilj nam je izgradnja novog skladišta od 500m2 da postanemo regionalni centar za Hrvatsku. Povećali bismo proizvodnju barem na 800 tona, tako da snabdijevamo Hrvatsku s batatom 12 mjeseci u godini, a ne da se on uvozi iz Egipta“, kaže Željko.

Posla oko skladištenja ima više nego kod običnog krumpira, a rad košta. Po hektaru je zarada optimalno od 25.000 do 35.000 kuna, pa ono što se priča da se na hektaru nasada dobije 40-50 tona to nije stvarnost i tu se puno ljudi razočara. Ove godine prosječni urod im je bio oko 17 t/ha dok je za boljih godina u Hrvatskoj moguće dobiti i do 22 t/ha.

Domaće tržište najviše traži narančasti batat

U Biofertu ne trebaju brinuti puno o plasmanu. Pakiranjem batata se ne bave, jer nemaju vremena. Zato rade s pakirnicama, s dvije u Hrvatskoj, jednom u Sloveniji i jednom u Mađarskoj. Batat ide njima u rinfuzi, a oni ga dalje pakiraju i distribuiraju u najveće trgovačke centre.

Osim nekoliko sorti narančastog batata, Željko uzgaja i neke ljubičaste i bijele sorte. Sedamdeset posto narančaste sorte ide na domaće tržište, a ostale dvije sorte oko 30 posto. Lokalne specifičnosti tržišta diktiraju potražnju za određenim sortama pa tako za Mađarsku ide samo bijeli i ljubičasti batat. Ove sorte su okusom različite od narančastog jer je bijeli manje sladak, a ljubičasti okusom vuče na kesten i puno je tvrđi.

Batat, kao i krumpir potječe iz centralne i Južne Amerike. Tamo je poznat u uzgoju nekoliko tisuća godina. S običnim krumpirom ne dijeli niti botaničko porijeklo (Convolvulaceae ≠ Solanaceae), niti nutritivni sastav. Samim time bitno drugačije utječe na naše tijelo.

Obje ove namirnice dobar su izvor vlakana i ugljikohidrata. Od ugljikohidrata, obični krumpir sadrži više škroba, a slatki više šećera. Običan krumpir ima više Fe i K, a batat je, s druge strane bogatiji izvor vitamina A, beta-karotena, Ca, i Mn.

Željko je danas naš najveći proizvođač batata. Iako je diplomirao na Agronomskom fakultetu, njegova je stručnost odrazdugogodišnjeg iskustva s batatom. Kako ima u planu daljnje širenje, poziva nove kooperante da mu se pridruže.

"Mislim da poljoprivreda ima budućnost, a uz malo promišljanja i pametnog rada može se lijepo živjeti od nje“, zaključio je Markušić za Agroklub.

Slatki krumpir ušao je u hrvatske kuhinje, ali na mala vrata. Još ga uvijek veliki dio stanovništva ne poznaje i zaobilazi, znatiželjno ga pogledavajući na policama trgovina. Neki su ga isprobali pa odustali shvativši da okusom nije sličan običnom krumpiru. No, veliki je i broj onih koji su ga trajno zavoljeli, piše Agroklub.

Ime je dobio po krumpiru zbog sličnog načina pripremanja. Iako okusom drugačiji, učestalo se priprema kuhanjem ili pečenjem. Može se koristiti kao sirovina za juhe ili u varivima. Popečci i pire su također popularni. Gdje god se inače koristi bundeva ili mrkva može ići batat, pa čak i u kolače.

Uzgoj batata isplativiji od krumpira

Za njegov uzgoj u Hrvatskoj, Željko Markušić odlučio se prije 12 godina. Pokrenuo je obrt Biofert u Jastrebarskom i od tada ne prestaje rasti. Ušli su u sve veće trgovačke lance, a batat izvoze u Njemačku, Sloveniju, Crnu Goru i Mađarsku.

"Ideja je došla na fakultetu, razmišljao sam o nečem što drugi nemaju. Svi ovdje uzgajaju vinograde, rajčice, povrće, žitarice, a ja rekoh: idem probati nešto novo“, prisjetio se početaka.

Ovaj uzgajivač kaže da je uzgoj batata isplativiji od uzgoja običnog krumpira, ali da je više brige potrebno posvetiti skladištenju. Kada ga iskopaju, on ide u skladišta gdje se 5 dana zagrijava na 32°C. Poslije toga se čuva na 15°C.

Tu se konzerviraju sve rane i oštećenja da ne bi došlo do kasnijeg kvarenja. Pranje prije skladištenja nije preporučljivo, jer ako je godina suha i nema velikih oborina, onda se prašina s površine batata lako uklanja bez pranja, navodi ovaj agronom.

Žele povećati proizvodnju u kooperaciji

Ove godine su u vlastitoj proizvodnji imali batat zasađen na 10 h, a u kooperaciji na dodatnih 15 ha diljem Hrvatske od Baranje i Neretve, preko Kutine i Bjelovara. Godišnje proizvedu oko 400 tona (zajedno s kooperacijom) i pokraj Jastrebarskog unajmljuju skladišni prostor čije su kapacitete prerasli.

"Cilj nam je izgradnja novog skladišta od 500m2 da postanemo regionalni centar za Hrvatsku. Povećali bismo proizvodnju barem na 800 tona, tako da snabdijevamo Hrvatsku s batatom 12 mjeseci u godini, a ne da se on uvozi iz Egipta“, kaže Željko.

Posla oko skladištenja ima više nego kod običnog krumpira, a rad košta. Po hektaru je zarada optimalno od 25.000 do 35.000 kuna, pa ono što se priča da se na hektaru nasada dobije 40-50 tona to nije stvarnost i tu se puno ljudi razočara. Ove godine prosječni urod im je bio oko 17 t/ha dok je za boljih godina u Hrvatskoj moguće dobiti i do 22 t/ha.

Domaće tržište najviše traži narančasti batat

U Biofertu ne trebaju brinuti puno o plasmanu. Pakiranjem batata se ne bave, jer nemaju vremena. Zato rade s pakirnicama, s dvije u Hrvatskoj, jednom u Sloveniji i jednom u Mađarskoj. Batat ide njima u rinfuzi, a oni ga dalje pakiraju i distribuiraju u najveće trgovačke centre.

Osim nekoliko sorti narančastog batata, Željko uzgaja i neke ljubičaste i bijele sorte. Sedamdeset posto narančaste sorte ide na domaće tržište, a ostale dvije sorte oko 30 posto. Lokalne specifičnosti tržišta diktiraju potražnju za određenim sortama pa tako za Mađarsku ide samo bijeli i ljubičasti batat. Ove sorte su okusom različite od narančastog jer je bijeli manje sladak, a ljubičasti okusom vuče na kesten i puno je tvrđi.

Batat, kao i krumpir potječe iz centralne i Južne Amerike. Tamo je poznat u uzgoju nekoliko tisuća godina. S običnim krumpirom ne dijeli niti botaničko porijeklo (Convolvulaceae ≠ Solanaceae), niti nutritivni sastav. Samim time bitno drugačije utječe na naše tijelo.

Obje ove namirnice dobar su izvor vlakana i ugljikohidrata. Od ugljikohidrata, obični krumpir sadrži više škroba, a slatki više šećera. Običan krumpir ima više Fe i K, a batat je, s druge strane bogatiji izvor vitamina A, beta-karotena, Ca, i Mn.

Željko je danas naš najveći proizvođač batata. Iako je diplomirao na Agronomskom fakultetu, njegova je stručnost odrazdugogodišnjeg iskustva s batatom. Kako ima u planu daljnje širenje, poziva nove kooperante da mu se pridruže.

"Mislim da poljoprivreda ima budućnost, a uz malo promišljanja i pametnog rada može se lijepo živjeti od nje“, zaključio je Markušić za Agroklub.
