Pristupačan, zasitan, ukusan, jednostavan za kuhanje, bogat vlaknima, izvrstan izvor folne kiseline, željeza i proteina neživotinjskog porijekla - znate li koja namirnica odgovara ovom opisu? Odgovor je grah. Možda ste ga se nauživali tijekom zimskih mjeseci, ali to nije razlog za pozdraviti se s tom zdravom mahunarkom na počertku proljeća, kad nam treba najviše hranivih tvari. I zato donosimo jedan odličan recept za grah koji ni po čemu ne nalikuje jelima od te namirnice kakva volimo pripremati zimi. Recept je grčki, a riječ je o jako poznatom jelu, fasoladi (ili fasouladi).

Postoje dvije verzije ovog jela, jedna se priprema "na crveno", druga "na bijelo".  Obje verzije imaju iste korake pripreme, gotovo do samog kraja pa se lako možete predomisliti na pola kuhanja. Razlika će biti samo u tome što ćete u prvom slučaju pri kraju kuhanja dodati rajčicu (obično koncentrat ili passatu), a u drugom njeno dodavanje preskočiti, a već skuhanoj fasoladi prilikom posluživanja dodati malo soka od limuna.

Fasolada

Sastojci:

300 g suhog graha cannellini 
1,5 l vruće vode
120 g maslinovog ulja
3 mrkve
2 režnja češnjaka
1 stabljika celera
1 luk
1 žličica mljevene paprike
limunov sok po ukusu
sol, papar po ukusu

Dodatno (ako je kuhate "na crveno")

1 list lovora
2 žlice koncentrata rajčice
6 žlica vode
1 žličica ružmarina
svježi timijan

Priprema:

Grah namočite preko noći, ujutro ga isplahnite i stavite kuhati. Kad voda prokuha, pričekajte 2-3 minute pa maknite lonac sa štednjaka i procijedite grah. Nalijte svježu vrelu vodu, dodajte luk, mrkvu, celer i češnjak. Zakuhajte i smanjite vatru na srednje nisku. Poklopite i pirjajte 1 do 1 1/2 sat, odnosno dok grah ne omekša, ali pripazite da ne postane kašast. Po želji dodajte još vruće vode.

Posolite i popaprite. Dodajte maslinovo ulje. Izvadite 1-2 kacijole pa vilicom zgnječite grah i vratite smjesu u lonac. Dobro promiješajte pa kuhajte još 5 minuta. 

Podijelite u tanjure i u svaki dodajte malo limunovog soka i pospite mljevenom paprikom.

Želite li napraviti fasoladu "na crveno", nakon što ste zgnječili dio graha i vratili ga u lonac, dodajte sušeni ružmarin, lovorov list i koncentrat rajčice pomiješan s vodom, kuhajte još pet minuta i podijelite u tanjure pa pospite crvenom paprikom i svježim timijanom.

Pristupačan, zasitan, ukusan, jednostavan za kuhanje, bogat vlaknima, izvrstan izvor folne kiseline, željeza i proteina neživotinjskog porijekla - znate li koja namirnica odgovara ovom opisu? Odgovor je grah. Možda ste ga se nauživali tijekom zimskih mjeseci, ali to nije razlog za pozdraviti se s tom zdravom mahunarkom na počertku proljeća, kad nam treba najviše hranivih tvari. I zato donosimo jedan odličan recept za grah koji ni po čemu ne nalikuje jelima od te namirnice kakva volimo pripremati zimi. Recept je grčki, a riječ je o jako poznatom jelu, fasoladi (ili fasouladi).

Postoje dvije verzije ovog jela, jedna se priprema "na crveno", druga "na bijelo".  Obje verzije imaju iste korake pripreme, gotovo do samog kraja pa se lako možete predomisliti na pola kuhanja. Razlika će biti samo u tome što ćete u prvom slučaju pri kraju kuhanja dodati rajčicu (obično koncentrat ili passatu), a u drugom njeno dodavanje preskočiti, a već skuhanoj fasoladi prilikom posluživanja dodati malo soka od limuna.

Fasolada

Sastojci:

300 g suhog graha cannellini 
1,5 l vruće vode
120 g maslinovog ulja
3 mrkve
2 režnja češnjaka
1 stabljika celera
1 luk
1 žličica mljevene paprike
limunov sok po ukusu
sol, papar po ukusu

Dodatno (ako je kuhate "na crveno")

1 list lovora
2 žlice koncentrata rajčice
6 žlica vode
1 žličica ružmarina
svježi timijan

Priprema:

Grah namočite preko noći, ujutro ga isplahnite i stavite kuhati. Kad voda prokuha, pričekajte 2-3 minute pa maknite lonac sa štednjaka i procijedite grah. Nalijte svježu vrelu vodu, dodajte luk, mrkvu, celer i češnjak. Zakuhajte i smanjite vatru na srednje nisku. Poklopite i pirjajte 1 do 1 1/2 sat, odnosno dok grah ne omekša, ali pripazite da ne postane kašast. Po želji dodajte još vruće vode.

Posolite i popaprite. Dodajte maslinovo ulje. Izvadite 1-2 kacijole pa vilicom zgnječite grah i vratite smjesu u lonac. Dobro promiješajte pa kuhajte još 5 minuta. 

Podijelite u tanjure i u svaki dodajte malo limunovog soka i pospite mljevenom paprikom.

Želite li napraviti fasoladu "na crveno", nakon što ste zgnječili dio graha i vratili ga u lonac, dodajte sušeni ružmarin, lovorov list i koncentrat rajčice pomiješan s vodom, kuhajte još pet minuta i podijelite u tanjure pa pospite crvenom paprikom i svježim timijanom.

Pristupačan, zasitan, ukusan, jednostavan za kuhanje, bogat vlaknima, izvrstan izvor folne kiseline, željeza i proteina neživotinjskog porijekla - znate li koja namirnica odgovara ovom opisu? Odgovor je grah. Možda ste ga se nauživali tijekom zimskih mjeseci, ali to nije razlog za pozdraviti se s tom zdravom mahunarkom na počertku proljeća, kad nam treba najviše hranivih tvari. I zato donosimo jedan odličan recept za grah koji ni po čemu ne nalikuje jelima od te namirnice kakva volimo pripremati zimi. Recept je grčki, a riječ je o jako poznatom jelu, fasoladi (ili fasouladi).

Postoje dvije verzije ovog jela, jedna se priprema "na crveno", druga "na bijelo".  Obje verzije imaju iste korake pripreme, gotovo do samog kraja pa se lako možete predomisliti na pola kuhanja. Razlika će biti samo u tome što ćete u prvom slučaju pri kraju kuhanja dodati rajčicu (obično koncentrat ili passatu), a u drugom njeno dodavanje preskočiti, a već skuhanoj fasoladi prilikom posluživanja dodati malo soka od limuna.

Fasolada

Sastojci:

300 g suhog graha cannellini 
1,5 l vruće vode
120 g maslinovog ulja
3 mrkve
2 režnja češnjaka
1 stabljika celera
1 luk
1 žličica mljevene paprike
limunov sok po ukusu
sol, papar po ukusu

Dodatno (ako je kuhate "na crveno")

1 list lovora
2 žlice koncentrata rajčice
6 žlica vode
1 žličica ružmarina
svježi timijan

Priprema:

Grah namočite preko noći, ujutro ga isplahnite i stavite kuhati. Kad voda prokuha, pričekajte 2-3 minute pa maknite lonac sa štednjaka i procijedite grah. Nalijte svježu vrelu vodu, dodajte luk, mrkvu, celer i češnjak. Zakuhajte i smanjite vatru na srednje nisku. Poklopite i pirjajte 1 do 1 1/2 sat, odnosno dok grah ne omekša, ali pripazite da ne postane kašast. Po želji dodajte još vruće vode.
