Rujan je u Dalmaciji u znaku lova na lignje. E, ali nije sasvim svejedno za koji se način lova odlučiti, odnosno za lignju uhvaćenu kojom metodom se odlučiti na ribarnici. Baš se na tom tragu razvila polemika u komentarima pod objavom na odličnoj Facebook stranici Splitska peškarija, čiji nam je administrator ustupio fotografiju koja je potegla ovo pitanje.

Dakle u komentarima pod primamljivom fotografijom friških jadranskih liganja izloženih na banku, naslovljenu "Osim izgleda i dikojeg zrna pijeska ima li razlike u okusu lignje od koće i lignje s peškafonda?" nastala je rasprava oko toga kako ih pripremiti pa nam je stoga odmah privukla pažnju...

S obzirom na to da su ulovljene koćom, brinuli su se neki, mogle bi biti problematične. "Lignju s peškafonda s guštom ispečeš ili pofrigaš, pa iziš neočišćenu, izniman okus crnila, ali ovu iz koće nikad ne bi jela neočišćenu", izjasnila se jedna od pratiteljica stranice, no na toj joj je jedan nešto manje finćukast gurman spremno kontrirao: "Nema, još su mekše. Samo ih triba otvorit na repu i pustit da sve ispere voda". 

Zanimalo nas je što na sve to ima za reći administrator koji uporno nastoji ostati anoniman pa nam je od njega pristigao ovakav komentar.

Vječna dilema: ima li razlike ili nema?

- Pitate li ribare, većina će reći da razlike nema, osim ako je želite spremati u komadu bez čišćenja jer u tom slučaju iskače ona s peškafonda, koja je čista. U lignjama  ulovljenima koćom, zbog toga što se mreža vuče po dnu, zna biti pijeska i malih ribica pa se takve ne mogu spremati u komadu i to je to. Dakle odgovor bi bio da kad je u komadu, a peče se ili se radi podušena, razlika postoji, ali ne u okusu nego u problemima koje nosi način lova - kratko nam je i jasno riješio tu, kako ju je nazvao, vječnu dilemu.

Sad kad je sve jasno možemo vas samo uputiti da skoknete na peškariju ili da se prihvatite peškafonda, a mi vam u nastavku nudimo recept prikladan za lignje ulovljene bilo kojom metodom.

Lignje ‘in umido‘

Za 4 osobe

Sastojci:

1 kg liganja
6-7 krumpira
2 mlada luka
1 režanj češnjaka
1 dl bijelog vina
3 žlice maslinovog ulja
peršin
sol, papar

Priprema:

Očistite lignjama utrobu i uklonite im oči. Ako su iste veličine, ostavite ih cijele, u protivnom ih narežite na jednake komade ili manje ostavite cijele, a veće narežite. Bitno je da su podjednake jer se jako brzo skuhaju.

Krumpir ogulite i narežite na ploške te ga kuhajte dok nije napola gotov. Procijedite ih te sačuvajte malo vode u kojoj su se kuhali.

Luk, češnjak i peršin sitno nasjeckajte.

U širu, dublju posudu stavite ulje, na njega posložite lignje pa ih poklopite i pustite da se dinstaju dok ne uhvate boju, zatim otklopite pa lignje okrenite i zalijte vinom te pospite nasjeckanim lukom, češnjakom i peršinom. Poklopite i kratko prokuhajte pa dodajte krumpire i malo ih posolite.

Kad krumpiri upiju šug, sve pažljivo preokrenite te po potrebi dodajte malo vode koju ste sačuvali od kuhanja krumpira. Kuhajte još koji trenutak dok lignje i krumpiri ne postanu meki pa poslužite. U jelo za vrijeme kuhanja po želji možete dodati i rajčice, a taokđer možete izostaviti krumpir pa lignje poslužiti uz neki drugi prilog po želji.

Vječna dilema: ima li razlike ili nema?

Rujan je u Dalmaciji u znaku lova na lignje. E, ali nije sasvim svejedno za koji se način lova odlučiti, odnosno za lignju uhvaćenu kojom metodom se odlučiti na ribarnici. Baš se na tom tragu razvila polemika u komentarima pod objavom na odličnoj Facebook stranici Splitska peškarija, čiji nam je administrator ustupio fotografiju koja je potegla ovo pitanje.

Dakle u komentarima pod primamljivom fotografijom friških jadranskih liganja izloženih na banku, naslovljenu "Osim izgleda i dikojeg zrna pijeska ima li razlike u okusu lignje od koće i lignje s peškafonda?" nastala je rasprava oko toga kako ih pripremiti pa nam je stoga odmah privukla pažnju...

S obzirom na to da su ulovljene koćom, brinuli su se neki, mogle bi biti problematične. "Lignju s peškafonda s guštom ispečeš ili pofrigaš, pa iziš neočišćenu, izniman okus crnila, ali ovu iz koće nikad ne bi jela neočišćenu", izjasnila se jedna od pratiteljica stranice, no na toj joj je jedan nešto manje finćukast gurman spremno kontrirao: "Nema, još su mekše. Samo ih triba otvorit na repu i pustit da sve ispere voda". 

Zanimalo nas je što na sve to ima za reći administrator koji uporno nastoji ostati anoniman pa nam je od njega pristigao ovakav komentar.

- Pitate li ribare, većina će reći da razlike nema, osim ako je želite spremati u komadu bez čišćenja jer u tom slučaju iskače ona s peškafonda, koja je čista. U lignjama  ulovljenima koćom, zbog toga što se mreža vuče po dnu, zna biti pijeska i malih ribica pa se takve ne mogu spremati u komadu i to je to. Dakle odgovor bi bio da kad je u komadu, a peče se ili se radi podušena, razlika postoji, ali ne u okusu nego u problemima koje nosi način lova - kratko nam je i jasno riješio tu, kako ju je nazvao, vječnu dilemu.

Sad kad je sve jasno možemo vas samo uputiti da skoknete na peškariju ili da se prihvatite peškafonda, a mi vam u nastavku nudimo recept prikladan za lignje ulovljene bilo kojom metodom.

Lignje ‘in umido‘

Za 4 osobe

Sastojci:

1 kg liganja
6-7 krumpira
2 mlada luka
1 režanj češnjaka
1 dl bijelog vina
3 žlice maslinovog ulja
peršin
sol, papar

Priprema:

Očistite lignjama utrobu i uklonite im oči. Ako su iste veličine, ostavite ih cijele, u protivnom ih narežite na jednake komade ili manje ostavite cijele, a veće narežite. Bitno je da su podjednake jer se jako brzo skuhaju.

Krumpir ogulite i narežite na ploške te ga kuhajte dok nije napola gotov. Procijedite ih te sačuvajte malo vode u kojoj su se kuhali.

Luk, češnjak i peršin sitno nasjeckajte.

U širu, dublju posudu stavite ulje, na njega posložite lignje pa ih poklopite i pustite da se dinstaju dok ne uhvate boju, zatim otklopite pa lignje okrenite i zalijte vinom te pospite nasjeckanim lukom, češnjakom i peršinom. Poklopite i kratko prokuhajte pa dodajte krumpire i malo ih posolite.

Kad krumpiri upiju šug, sve pažljivo preokrenite te po potrebi dodajte malo vode koju ste sačuvali od kuhanja krumpira. Kuhajte još koji trenutak dok lignje i krumpiri ne postanu meki pa poslužite. U jelo za vrijeme kuhanja po želji možete dodati i rajčice, a taokđer možete izostaviti krumpir pa lignje poslužiti uz neki drugi prilog po želji.
