Vrijeme je za skuhati objed ili večeru, a pogled u hladnjak baca vas u očaj... Bilo da nemate vremena, volje ili novca za odlazak u kupovinu, morat ćete se snaći s onim što već imate u kući, a ako slučajno imate špagete, papar i malo tvrdog sira, nema problema jer od te tri stvari možete napraviti jako ukusno jelo.

Talijani su odavno (navodno još u doba starog Rima) utvrdili da se ribanjem tvrdog sira na vruću tjesteninu, uz dodatak par žlica vode u kojoj se manistra kuhala, dobije fini umak kojeg treba samo još malo popraviti s kojim zrnom soli i papra. I eto vam cacio e pepe, u prijevodu sir pecorino i papar, širom svijeta poznat specijalitet tradicionalne talijanske kuhinje. Cacio e pepe

225 grama špageta
50 grama sira pecorino
1-2 žličice svježe mljevenog papra
sol

Skuhatje špagete i sačuvajte malo vode u kojoj su se kuhali. Fino naribajte pecorino (ako nemate originalni Pecorino Romano poslužit će bilo koji drugi tvrdi sir od ovčjeg mlijeka ili parmezan). Dodajte sir u ocijeđenu tjesteninu. Podlijte s malo vode u kojoj se kuhala. Dodajte papar. Vratite još kratko na laganu vatru i dobro promiješajte. Provjerite treba li dodati još soli (ako ste koristili pravi pecorino, vjerojatno ne treba). I to je to.

E, sad, ako želite komplicirati, evo par ideja. Svježe mljeven papar neki malo tostiraju na masinovom ulju, to mu, tvrde, intenzivira okus. Neki na tek skuhamu manistru bace malo maslaca, jer tako, kažu, umak postane kremastiji i ukusniji (dodali bismo: i kripniji). Prije posluživanja možete sve preliti s malo dobrog maslinovog ulja. Vrijeme je za skuhati objed ili večeru, a pogled u hladnjak baca vas u očaj... Bilo da nemate vremena, volje ili novca za odlazak u kupovinu, morat ćete se snaći s onim što već imate u kući, a ako slučajno imate špagete, papar i malo tvrdog sira, nema problema jer od te tri stvari možete napraviti jako ukusno jelo.

Talijani su odavno (navodno još u doba starog Rima) utvrdili da se ribanjem tvrdog sira na vruću tjesteninu, uz dodatak par žlica vode u kojoj se manistra kuhala, dobije fini umak kojeg treba samo još malo popraviti s kojim zrnom soli i papra. I eto vam cacio e pepe, u prijevodu sir pecorino i papar, širom svijeta poznat specijalitet tradicionalne talijanske kuhinje. Cacio e pepe

225 grama špageta
50 grama sira pecorino
1-2 žličice svježe mljevenog papra
sol

Skuhatje špagete i sačuvajte malo vode u kojoj su se kuhali. Fino naribajte pecorino (ako nemate originalni Pecorino Romano poslužit će bilo koji drugi tvrdi sir od ovčjeg mlijeka ili parmezan). Dodajte sir u ocijeđenu tjesteninu. Podlijte s malo vode u kojoj se kuhala. Dodajte papar. Vratite još kratko na laganu vatru i dobro promiješajte. Provjerite treba li dodati još soli (ako ste koristili pravi pecorino, vjerojatno ne treba). I to je to.

E, sad, ako želite komplicirati, evo par ideja. Svježe mljeven papar neki malo tostiraju na masinovom ulju, to mu, tvrde, intenzivira okus. Neki na tek skuhamu manistru bace malo maslaca, jer tako, kažu, umak postane kremastiji i ukusniji (dodali bismo: i kripniji). Prije posluživanja možete sve preliti s malo dobrog maslinovog ulja. I ne komplicirajte dalje, jer to onda više neće biti cacio e pepe, jelo omiljeno ponajprije zbog svoje jednostavnosti.
