Vikend je i dobro bi nam sjelo nešto dobro, friško i morsko... a zašto umjesto ribe na meniju ne bi bile lignje? Na šporko. Po receptu koji smo pronašli u jednoj lijepoj Facebook grupi, Lipa spiza dalmatinska, a objavio ga je Splićanin Marijan Zujić.

Kako piše ovaj zaljubljenik u dobra, stara dalmatinska jela, lignje na šporko tradicionalni je način pripremanja liganja na obali Jadrana, a njemu osobno, priznaje nam, jedna su od najdražih delicija.

"Velike lignje očiste se i operu te izrežu na kolutiće, dok se manje lignje sa peškafonda ne čiste nego se frigaju „na šporko“, a koliko dugo, ovisi o samoj veličini liganja. Okus je puno bolji, meso je ukusnije, mekše i sočnije" savjetuje šjor Zujić te napominje kako se ne radi lijenosti kuhara, nego su lignje na ovaj način jednostavno odlične. Uostalom, dodaje,  mnogi restorani u Dalmaciji ih spremaju na ovaj način jer su prava delicija za gurmane.

"Kad su lignje frigane, posložiti ih na pliticu te ih servirati sa izrezanim limunom, sitno sjeckanim češnjakom i peršinom. Po želji prelije ih se sa domaćim maslinovim uljem. Na tanjuru ih dodatno posoliti i popapriti, jer ne vole svi slano ni papreno. Najbolje ih je servirati uz kuhanu blitvu, špinat ili sa lešo krumpirom sa rikulom. Navedene priloge, posoliti, popapriti te začiniti maslinovim uljem" zaključuje te poručuje kako se s friganim lignjama pije dobro bijelo ili crno vino te gemišt.

Dodao je još jedan zgodan savjet koji će manje upućenima pomoći u razlikovanju lignjuna i lignje.

Uvjerio sam se više puta da mnogi neupućeni, ne znaju razlikovati lignju od lignjuna, iako je razlika u cijeni ogromna, kao i sam izgled. Lignjun ili totan je obično manji od lignje te ima više roze boje od lignje. Meso mu je tanje i žilavije nego kod liganja. Lignjuni imaju peraju na samom kraju tijela, dok se kod lignje proteže gotovo po čitavoj dužini tijela te lignje imaju manju glavu od lignjuna u odnosu na veličinu tijela. Vikend je i dobro bi nam sjelo nešto dobro, friško i morsko... a zašto umjesto ribe na meniju ne bi bile lignje? Na šporko. Po receptu koji smo pronašli u jednoj lijepoj Facebook grupi, Lipa spiza dalmatinska, a objavio ga je Splićanin Marijan Zujić.

Kako piše ovaj zaljubljenik u dobra, stara dalmatinska jela, lignje na šporko tradicionalni je način pripremanja liganja na obali Jadrana, a njemu osobno, priznaje nam, jedna su od najdražih delicija.

"Velike lignje očiste se i operu te izrežu na kolutiće, dok se manje lignje sa peškafonda ne čiste nego se frigaju „na šporko“, a koliko dugo, ovisi o samoj veličini liganja. Okus je puno bolji, meso je ukusnije, mekše i sočnije" savjetuje šjor Zujić te napominje kako se ne radi lijenosti kuhara, nego su lignje na ovaj način jednostavno odlične. Uostalom, dodaje,  mnogi restorani u Dalmaciji ih spremaju na ovaj način jer su prava delicija za gurmane.

"Kad su lignje frigane, posložiti ih na pliticu te ih servirati sa izrezanim limunom, sitno sjeckanim češnjakom i peršinom. Po želji prelije ih se sa domaćim maslinovim uljem. Na tanjuru ih dodatno posoliti i popapriti, jer ne vole svi slano ni papreno. Najbolje ih je servirati uz kuhanu blitvu, špinat ili sa lešo krumpirom sa rikulom. Navedene priloge, posoliti, popapriti te začiniti maslinovim uljem" zaključuje te poručuje kako se s friganim lignjama pije dobro bijelo ili crno vino te gemišt.

Dodao je još jedan zgodan savjet koji će manje upućenima pomoći u razlikovanju lignjuna i lignje.

Uvjerio sam se više puta da mnogi neupućeni, ne znaju razlikovati lignju od lignjuna, iako je razlika u cijeni ogromna, kao i sam izgled. Lignjun ili totan je obično manji od lignje te ima više roze boje od lignje. Meso mu je tanje i žilavije nego kod liganja. Lignjuni imaju peraju na samom kraju tijela, dok se kod lignje proteže gotovo po čitavoj dužini tijela te lignje imaju manju glavu od lignjuna u odnosu na veličinu tijela. Sve ove razlike, najbolje se vide na priloženoj slici.
