Od blagdan Svih svetih dijeli nas taman dovoljno vremena za pripremiti starinsku poslasticu koja se tradicionalno priprema baš tom prigodom, premda u njoj volimo uživati kad god nam se pruži prilika. Nama su u Dalmaciji poznati kao bobići, drugdje se nazivaju fave dei morti ili favette, no recept je uvijek manje više isti: riječ je o smjesi bjelanjaka, šećera i badema uz dodatak kakaa za tamniju varijantu.

Oblikom podsjećaju na bob, biljku za koju su stari Egipćani vjerovali da čuva duše pokojnika pa su ga koristili u pogrebnim obredima, a ta se simbolika svidjela i Grcima pa njihova božica sudbine Moira, prema njihovoj mitologiji, uživa upravo u toj meditaranskoj mahunarki. Možda je baš zbog tih vjerovanja, koliko god se u to vrijeme smatrala heretičkima, opat Odion iz opatije Cluny njime u 10 stoljeću, kako se priča, nahranio svoje redovnike na Dušni dan, a možda je riječ o vjerovanju koje su Pitagorejci prognani iz Grčke donijeli u Italiju odakle se proširilo i u Francusku, gdje se nalazila spomenuta opatija...

No ostavimo se nagađanja i uhvatimo se posla, jer oko bobića iga itekako ima, svaku slatku okruglicu treba ručno izvaljati... Recepata za bobiće ima uistinu u izobilju, kako je uvijek s tradicionalnim, starinskim jelima i svaka se familija kune da je baš njen onaj pravi. Otkrio nam ga je prije koju godinu Dražen Kirigin, koji je s i rođakom Mirom slastičarnicu i sve njezine slatke tajne dobio u naslijeđe. Na gornjem linku recept ćete naći u izvorniku, kako nam ga je šjor Kirigin izdiktirao, no za one koji zapinju sa starim splitskim izrazima donosimo književnu transkripciju.
Kiriginova riceta za bobiće
330 grama badema plus još malo za oblikovanje
660 grama šećera u prahu
20-40 grama kakaa
2 jaja
po nekoliko kapi arome vanilije i limuna
Postupak:
Bademe fino sameljite i pomiješajte sa šećerom u prahu. Jaja pomiješajte s aromama i dodajte bademima pa dobro izmiješajte. Oblikujte debeli valjak i prerežite ga napola.
Jednu polovicu ostavite sa strane zamotanu u plastičnu foliju, a u drugu dodajte kakao. Količinu prilagodite ovisno o tome jeste li nabavili tamniji, čisti ili svjetliji, obrani kakao, a dodajite ga pomalo kako smjesa ne bi postala previše gorka.
Prije nego počnete raditi bobiće, pripremite još mljevenih badema, no ne onako fino usitnjenih kao za smjesu. U njih ćete uvaljati bobiće.
Bobiće oblikujte tako da smjesu izvaljate u valjke debljine palca, a od njih potom odrežite manje komade koje ćete oblikovati u kuglice. Najprije valjajte bijele.
Gotove bobiće poslažite u nauljenu posudu za pečenje i pecite 10 – 12 minuta u pećnici zagrijanoj na 140 stupnjeva. Pazite da se ne presuše kako ne bi bili tvrdi kad se ohlade.

Od blagdan Svih svetih dijeli nas taman dovoljno vremena za pripremiti starinsku poslasticu koja se tradicionalno priprema baš tom prigodom, premda u njoj volimo uživati kad god nam se pruži prilika. Nama su u Dalmaciji poznati kao bobići, drugdje se nazivaju fave dei morti ili favette, no recept je uvijek manje više isti: riječ je o smjesi bjelanjaka, šećera i badema uz dodatak kakaa za tamniju varijantu.

Oblikom podsjećaju na bob, biljku za koju su stari Egipćani vjerovali da čuva duše pokojnika pa su ga koristili u pogrebnim obredima, a ta se simbolika svidjela i Grcima pa njihova božica sudbine Moira, prema njihovoj mitologiji, uživa upravo u toj meditaranskoj mahunarki. Možda je baš zbog tih vjerovanja, koliko god se u to vrijeme smatrala heretičkima, opat Odion iz opatije Cluny njime u 10 stoljeću, kako se priča, nahranio svoje redovnike na Dušni dan, a možda je riječ o vjerovanju koje su Pitagorejci prognani iz Grčke donijeli u Italiju odakle se proširilo i u Francusku, gdje se nalazila spomenuta opatija...

Otkrio nam ga je prije koju godinu Dražen Kirigin, koji je s i rođakom Mirom slastičarnicu i sve njezine slatke tajne dobio u naslijeđe. Na gornjem linku recept ćete naći u izvorniku, kako nam ga je šjor Kirigin izdiktirao, no za one koji zapinju sa starim splitskim izrazima donosimo književnu transkripciju.
Kiriginova riceta za bobiće
330 grama badema plus još malo za oblikovanje
660 grama šećera u prahu
20-40 grama kakaa
2 jaja
po nekoliko kapi arome vanilije i limuna
Postupak:
Bademe fino sameljite i pomiješajte sa šećerom u prahu. Jaja pomiješajte s aromama i dodajte bademima pa dobro izmiješajte. Oblikujte debeli valjak i prerežite ga napola.
Jednu polovicu ostavite sa strane zamotanu u plastičnu foliju, a u drugu dodajte kakao. Količinu prilagodite ovisno o tome jeste li nabavili tamniji, čisti ili svjetliji, obrani kakao, a dodajite ga pomalo kako smjesa ne bi postala previše gorka.
Prije nego počnete raditi bobiće, pripremite još mljevenih badema, no ne onako fino usitnjenih kao za smjesu. U njih ćete uvaljati bobiće.
Bobiće oblikujte tako da smjesu izvaljate u valjke debljine palca, a od njih potom odrežite manje komade koje ćete oblikovati u kuglice. Najprije valjajte bijele.
Gotove bobiće poslažite u nauljenu posudu za pečenje i pecite 10 – 12 minuta u pećnici zagrijanoj na 140 stupnjeva. Pazite da se ne presuše kako ne bi bili tvrdi kad se ohlade.
