Recept potječe iz kultnog kulinarskog serijala koji je obilježio djetinjstva mnogih, "Male tajne velikih majstora kuhinje", gdje je jela pripremao veliki Stevo Karapandža uz obaveznu žlicu Vegete.
Ovdje je riječ o odrescima koji se pirjaju u vinu s puno češnjaka i peršina.
Za pripremu ovog jela trebate izdvojiti nešto vremena i malo vještine, ali vjerujte, isplatit će vam se, piše portal novosti.
Nakon pohanja, odresci se pirjaju u vinu i temeljcu, što se može učiniti na dva načina, na štednjaku ili u pećnici.
Ako se pripremi veća količina, dobro će doći i za naredni dan, dakako.
Tajna je da se koristi dobro vino za podlijevanje te da se mrvice prije pohanja odrezaka dobro "utuku" u meso, kako se ne bi odvajale kod pirjanja.
Peršin i češnjak nadopunjuju aromu ovog jela, meso bude mekano i topi se u ustima, a smjesa pohanja zgusne umak.
Tradicionalno se poslužuje uz pire krumpir, no mogu ići i s drugim prilogom po želji.
A evo i nepogrešivog recepta:
Sastojci za 4-5 osoba
• cca 600-800 g odrezaka od junećeg buta
• masnoća za pohanje
• 3-4 jaja
• krušne mrvice
• sol
• papar
• bijelo vino
• temeljac
• 3-4 režnja češnjaka
• peršinov list
Priprema:
Odreske od junećeg buta posolite i popaprite. Uvaljajte ih u krušne mrvice, prekrijte vrećicom za zamrzavanje (inače ćete imati punu kuhinju mrvica) te svaki istucite batom da se mrvice dobro priljube uz meso.
Tako pripremljene odreske umočite u umućena jaja pa opet u mrvice. Stavljajte ih u dobro zagrijanu masnoću te pohajte dok se ne zazlate s obje strane. Zagrijte pećnicu na 180 stupnjeva.
Pohane odreske poslažite u odgovarajuću posudu, prelijte s malo masnoće od pohanja, dodajte vino i temeljac u količini da prekriju meso, pospite češnjakom te malo posolite i popaprite.
Stavite u pećnicu i tako pirjajte nekih 45 minuta do sat vremena. Ako vam ponestane tekućine, slobodno dolijte još.
Pred kraj pirjanja, kada se na vrhu stvori karamelizirani sloj, dodajte nasjeckan peršinov list. Poslužite uz pire krumpir ili neki drugi omiljeni prilog.

Recept potječe iz kultnog kulinarskog serijala koji je obilježio djetinjstva mnogih, "Male tajne velikih majstora kuhinje", gdje je jela pripremao veliki Stevo Karapandža uz obaveznu žlicu Vegete.
Ovdje je riječ o odrescima koji se pirjaju u vinu s puno češnjaka i peršina.
Za pripremu ovog jela trebate izdvojiti nešto vremena i malo vještine, ali vjerujte, isplatit će vam se, piše portal novosti.
Nakon pohanja, odresci se pirjaju u vinu i temeljcu, što se može učiniti na dva načina, na štednjaku ili u pećnici.
Ako se pripremi veća količina, dobro će doći i za naredni dan, dakako.
Tajna je da se koristi dobro vino za podlijevanje te da se mrvice prije pohanja odrezaka dobro "utuku" u meso, kako se ne bi odvajale kod pirjanja.
Peršin i češnjak nadopunjuju aromu ovog jela, meso bude mekano i topi se u ustima, a smjesa pohanja zgusne umak.
Tradicionalno se poslužuje uz pire krumpir, no mogu ići i s drugim prilogom po želji.

Odreske od junećeg buta posolite i popaprite. Uvaljajte ih u krušne mrvice, prekrijte vrećicom za zamrzavanje (inače ćete imati punu kuhinju mrvica) te svaki istucite batom da se mrvice dobro priljube uz meso.
Tako pripremljene odreske umočite u umućena jaja pa opet u mrvice. Stavljajte ih u dobro zagrijanu masnoću te pohajte dok se ne zazlate s obje strane. Zagrijte pećnicu na 180 stupnjeva.
Pohane odreske poslažite u odgovarajuću posudu, prelijte s malo masnoće od pohanja, dodajte vino i temeljac u količini da prekriju meso, pospite češnjakom te malo posolite i popaprite.
Stavite u pećnicu i tako pirjajte nekih 45 minuta do sat vremena. Ako vam ponestane tekućine, slobodno dolijte još.
Pred kraj pirjanja, kada se na vrhu stvori karamelizirani sloj, dodajte nasjeckan peršinov list. Poslužite uz pire krumpir ili neki drugi omiljeni prilog.
